Its day two of Blogmas here on Ambermarie and I am working hard to make sure I have a full calendar of exciting posts lined up for you!
To me Christmas is never here without a good helping of spiced apple, whether it be crumbled, stewed, juiced or fresh there is something so Christmassy about cinnamon, apple and of course a little dose of cream. Here I have all the bases covered with my apple crumble and brandy custard (the brandy part is optional).
SPICED APPLE CRUMBLE
5 medium to large apples- cored, peeled and sliced.
1 tsp cinnamon
1/2 cup fine organic cane sugar
Juice of 1 lemon
250g melted unsalted butter
1 cup rolled oats
1/2 cup wholemeal flour
1 tsp cinnamon
1/2 cup brown sugar
Preheat oven to 180 degrees and place first 4 ingredients into an baking dish and mix well. Take another bowl and mix the next 5 ingredients until just combined, then spoon over the apple mixture. Place into oven on 180 degrees for 40-45 minutes until crumble is golden and apples are cooked. I like my apples slightly “defined” (not completely saucy) but you can leave for longer if you prefer it this way, just keep an eye on the crumble.
I like to have this desert with either cream, ice cream, yoghurt or custard. I opted for a slightly more indulgent custard this time.
6 egg yolks
3 tbsp of Brandy
1/4 cup of Fine organic cane sugar
2 tbsp Cornflour
2/3 cup Milk
1 tsp Vanilla Extract
Mix the cornflour and milk in a jug until it thickens, put cream, vanilla essence and brandy in a large saucepan, stir, and warm on a medium heat. Separate egg yolks into a bowl and mix well with the sugar. Once the cream has been heated whisk in egg and milk mixtures separately. Continue to stir until custard is desired thickness (this will become thicker once cooled). Serve warm or chilled on top of apple crumble and there you have a nice warm, christmassy, spiced desert.
