I finally have two days off in a row and so after finishing work earlier today as it was a weekend shift, I got my baking supplies out.
Im going to share with you my Christmas cookie baking experience, enjoy!
I honestly had so much fun making these, hours and hours of it. I enjoy giving baking as gifts also after putting hard work into it.
These are Spiced Gingerbread Cookies. Much like the ones I used to have as a kid during christmas, but altered slightly.
In these there is:
100g Butter, 250g Flour, 50g Brown sugar or Mascavado sugar, 50g Caster sugar, 125g Treacle, 1tsp Vanilla essence, 2tsp ground ginger (I use freshly ground with a touch of powder), 1 egg yolk, 1tsp Baking soda, 1tsp baking powder, 2tsp cinnamon, 1/2tsp ground cloves ( I grind these fresh too). I cream the butter, treacle and sugars together first until light and smooth, then I mix the vanilla essence and egg yolk. After that is just combined I add all dry ingredients and mix well, i also knead this before I either put this in the fridge in glad wrap for an hour or I go straight into rolling the dough out and cutting into shapes, depending on my time. I put these onto a baking tray and bake for 10-20 Minutes, playing it by the look I am going for with the cookies. I leave these to cool and then decorate. For my icing I use the egg white left over, lime juice and icing sugar (1cup) and use a piping bag to decorate.
These are nice and spicy, and perfect for any time of year, I hope you enjoyed this post folks! XX, Ambermarie.
